I did work out a solution to doing the eSIM swap eventually: went back to the store and got them to swap the eSIM for a physical SIM, put that in the new phone, then called Optus to have them swap the physical SIM for an eSIM over the phone (which they can do by sending a link).

@tweethue @Optus Looks like its all fixed now! I logged into the account and it somehow detected the bridge (after having issue on the phone). Its now correctly linked, thanks for the speedy reply!

@Optus In the past 2 days Optus has texted me to say they are putting a requested refund of $436.44 onto my credit card. I made no such request. This looks like they are closing my phone/internet account after decades with them. Help!
